Yogurt and Chocolate Covered Raspberry Bites
Are you looking for a simple, delicious sweet treat that’s perfect for dessert or a quick snack? These raspberry bites are perfect. They taste so good and are so easy to make. They only take three ingredients and just a few minutes of your time. I love having a few of these for dessert after lunch. They are perfect when you want something sweet and tangy!
Raspberries are full of fibre and vitamins such as vitamin C, magnesium and vitamin B6. In addition, the yogurt adds some calcium and protein, and the chocolate adds a delicious flavour! You can use frozen or fresh raspberries – I’ve made this recipe using both. One thing I noticed when I used the frozen raspberries was that they are more tart than the fresh raspberries. If you love the taste of tangy and sweet, then try using frozen raspberries; if not, I recommend fresh raspberries as they are a bit sweeter in this recipe.
You will notice in the recipe below that I mention using a double boiler for melting the chocolate. If you don’t have a specific pot designated to double boiling, it is super easy to make your own with a glass bowl and a pot. In the pot, add a small amount of water and place the glass bowl on top, making sure the bowl doesn’t touch the water, and the rim of the pot is holding it still. Then, bring the water to a boil and add your chocolate to the bowl, stirring until completely melted. For the chocolate, you can use dark chocolate chips (as stated in the recipe), or you can use baking chocolate; it’s easier to melt; however, once it’s melted, remove it from the stove as it will harden if heated for too long. Not very helpful for dipping or drizzling on raspberries.
I recommend storing these raspberries in the freezer, but place them in the fridge about 30 minutes before you want to enjoy them.
Let’s get into the recipe;
Ingredients: no measurements here; do as many as you will enjoy!
- Raspberries (frozen or fresh)
- Plain greek yogurt (or vanilla)
- Dark chocolate
Recipe:
- Line a baking sheet with parchment paper and place the raspberries on the tray.
- Scoop some yogurt into a small bowl and coat each raspberry with a layer of yogurt.
- Place the yogurt-covered raspberries in the freezer for about 10 minutes while you prepare your chocolate.
- Using a double boiler, melt the dark chocolate, stirring every 30 seconds until completely melted.
- Once the chocolate is melted, drizzle it over the raspberries (or dip the raspberries in the chocolate) and place the tray back in the freezer until the chocolate has hardened.
- Once the chocolate has hardened, they’re ready to enjoy!
