Lemon Loaf
When life gives you lemons… you make a lemon loaf! This is a super easy recipe so if you have any extra lemons & a sweet tooth, try this delicious recipe! 😉
Ingredients:
- 2 eggs
- 1/2 – 3/4 cup maple syrup (depending on sweetness desired)
- 1/2 cup avocado or olive oil
- 1 tbsp lemon zest
- 3 tbsp lemon juice
- 1 tsp vanilla extract
- 1 cup all purpose flour
- 1/2 cup almond flour
- 2 tsp baking powder
Recipe:
- Preheat your oven to 350F and line a loaf pan with parchment paper.
- In a large bowl, beat the eggs, maple syrup and oil together until combined and thick.
- Add the lemon zest, juice and vanilla extract and mix.
- Add the AP flour, almond flour and baking powder and gently mix until well combined. Some lumps are ok!
- Pour the batter into your prepared loaf pan and bake it for 50 minutes. Enjoy!
