Lemon Loaf

When life gives you lemons… you make a lemon loaf! This is a super easy recipe so if you have any extra lemons & a sweet tooth, try this delicious recipe! 😉

Lemon Loaf

Ingredients:

  • 2 eggs
  • 1/2 – 3/4 cup maple syrup (depending on sweetness desired)
  • 1/2 cup avocado or olive oil
  • 1 tbsp lemon zest
  • 3 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • 1/2 cup almond flour
  • 2 tsp baking powder

Recipe:

  1. Preheat your oven to 350F and line a loaf pan with parchment paper.
  2. In a large bowl, beat the eggs, maple syrup and oil together until combined and thick.
  3. Add the lemon zest, juice and vanilla extract and mix.
  4. Add the AP flour, almond flour and baking powder and gently mix until well combined. Some lumps are ok!
  5. Pour the batter into your prepared loaf pan and bake it for 50 minutes. Enjoy!
