Fruit and Nut Chocolate Bark

Who doesn’t love chocolate? Especially when it has delicious ingredients sprinkled on top! This recipe is one of my favourites for dessert. It’s great to make a large batch and give it away to family and friends as a gift! It’s so easy to make, and you can customize your toppings depending on what you or your loved ones like. You can make your bark sweet or salty, whichever you like best.

Although the toppings of your chocolate bark will alter its nutrients, it will be sure to taste delicious. Nuts will add healthy fats and any fruit you choose will add vitamins such as vitamin C. If you choose to add other things such as peanut butter, that would add some protein as well. In the recipe below I also decided to add raisins; these will contribute other vitamins such as vitamin B6 and iron. Try combining your favourite fruits to find what you love on your chocolate bark. I chose to add primarily fresh fruit and raisins; however, if you have a favourite dried fruit, try adding that in as well. No matter what, it tastes delicious. I also recommend drizzling yogurt on top of your fruit and nut bark before eating; it tastes so good!

You can choose to use regular dark chocolate for this recipe and melt it using a double boiler or in the microwave. However, if you’re looking for a vegan option, check out the recipe below! I made my own chocolate that tastes great as chocolate bark and is vegan! The chocolate is made out of cocoa powder, maple syrup, and coconut oil. Cocoa powder has nutrients such as potassium, magnesium, iron and protein, so if you choose to make your own chocolate (very easy), you’re getting added benefits within that as well!

Ingredients:

  • 1/2 cup Coconut oil
  • 3 tablespoons Cocoa powder
  • 1/4 cup Maple Syrup
  • Fruit (strawberry, raspberries, bananas)
  • Nuts (walnuts, almonds)
  • Raisins

Recipe:

  1. Add coconut oil, cocoa powder, and maple syrup in a small pot and whisk until melted and well combined.
  2. Line a baking tray with parchment paper and pour melted chocolate on the tray, and spread, trying to keep the chocolate reasonably thick.
  3. Sprinkle on any topping you like, such as fruit, nuts, or peanut butter drizzle.
  4. Place in the freezer for 2 hours or overnight.
  5. Remove from freezer and crack into pieces and enjoy!
